Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup plain Greek yogurt
  • 0.5 cup celery, diced
  • 0.5 cup red grapes, halved
  • 0.5 cup apples, diced (preferably a sweet variety)
  • 0.25 cup walnuts, chopped
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • optional fresh dill or parsley for garnish

Instructions

  1. In a large mixing bowl, combine the shredded chicken breast and plain Greek yogurt. Mix well until the chicken is fully coated.
  2. Add the diced celery, red grapes, diced apples, and chopped walnuts to the bowl. Gently fold the ingredients together.
  3. In a separate small bowl, whisk together the honey, Dijon mustard, lemon juice, salt, and pepper until well combined.
  4. Pour the dressing over the chicken mixture and fold gently to ensure even distribution of the flavors.
  5. Taste the salad and adjust the seasoning with more salt and pepper if necessary.
  6. Cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld.
  7. Before serving, give the salad a gentle stir and garnish with fresh dill or parsley if desired.
