Grilled Cheese with Gouda, Roasted Mushrooms, Onions
Ingredients
- 4 slices sourdough bread
- 2 cups shredded Gouda cheese
- 1 cup button mushrooms, sliced
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- to taste salt and pepper
- for garnish fresh thyme leaves (optional)
Instructions
- Preheat your oven to 400°F (200°C). In a baking dish, toss the sliced mushrooms and onions with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread them out evenly on the dish and roast for about 20-25 minutes, or until the mushrooms release their moisture and the onions are caramelized. Stir halfway through for even cooking.
- While the vegetables are roasting, heat a large skillet over medium heat. Spread butter on one side of each slice of sourdough.
- On the non-buttered side of two slices of bread, layer half the Gouda cheese, followed by the roasted mushrooms and onions, and then top with the remaining Gouda cheese. Place the other slices of bread on top, buttered side up.
- Once the skillet is warm, place the sandwiches in the skillet. Cook for about 4-5 minutes on each side, or until the bread is golden-brown and the cheese is melted. If your skillet is small, you may need to do this in batches.
- Once the sandwiches are ready, remove them from the skillet and let them rest for a minute. Cut them in half, and if desired, garnish with fresh thyme leaves for an added touch of flavor.
