Ingredients

  • 2 cups plain Greek yogurt
  • 1 cup granola (preferably low-sugar)
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 0 Mint leaves for garnish

Instructions

  1. In a medium bowl, combine the Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir well until the mixture is creamy and smooth.
  2. In serving glasses or bowls, begin layering by placing a few spoonfuls of the yogurt mixture at the bottom.
  3. Add a layer of granola on top of the yogurt, followed by a layer of mixed berries.
  4. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
  5. Garnish each parfait with a sprig of fresh mint for a pop of color and freshness.

Serve immediately for a crunchy texture, or refrigerate for up to 30 minutes for a softer granola experience.
