Ingredients

  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 quarter teaspoon salt
  • 1 large egg
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons maple syrup (plus extra for serving)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil, melted
  • 1.5 cups fresh strawberries, hulled and sliced
  • 1 tablespoon honey or agave syrup (optional, for strawberry topping)

Instructions

  1. In a large mixing bowl, whisk together the whole wheat flour, baking powder, cinnamon, and salt until well combined.
  2. In another bowl, beat the egg, then add the milk, maple syrup, vanilla extract, and melted coconut oil. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. Preheat your waffle maker according to the manufacturer's instructions. Lightly grease with a bit of coconut oil or cooking spray.
  5. Pour the batter onto the preheated waffle maker (amount will depend on your waffle maker size) and cook until golden and crispy, usually about 4-5 minutes. Repeat with the remaining batter.
  6. While the waffles are cooking, prepare the strawberry topping. In a bowl, combine the sliced strawberries with honey or agave syrup if desired, and gently toss to coat. Set aside to allow the juices to release.
  7. Once the waffles are done, serve them warm topped with the fresh strawberries and a drizzle of maple syrup. Enjoy your healthy treat!
