Healthy Waffles with Strawberry Topping Delight
Ingredients
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1 tablespoon ground cinnamon
- 1 quarter teaspoon salt
- 1 large egg
- 1 cup milk (dairy or non-dairy)
- 2 tablespoons maple syrup (plus extra for serving)
- 1 teaspoon vanilla extract
- 1 tablespoon coconut oil, melted
- 1.5 cups fresh strawberries, hulled and sliced
- 1 tablespoon honey or agave syrup (optional, for strawberry topping)
Instructions
- In a large mixing bowl, whisk together the whole wheat flour, baking powder, cinnamon, and salt until well combined.
- In another bowl, beat the egg, then add the milk, maple syrup, vanilla extract, and melted coconut oil. Mix until smooth.
- Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat your waffle maker according to the manufacturer's instructions. Lightly grease with a bit of coconut oil or cooking spray.
- Pour the batter onto the preheated waffle maker (amount will depend on your waffle maker size) and cook until golden and crispy, usually about 4-5 minutes. Repeat with the remaining batter.
- While the waffles are cooking, prepare the strawberry topping. In a bowl, combine the sliced strawberries with honey or agave syrup if desired, and gently toss to coat. Set aside to allow the juices to release.
- Once the waffles are done, serve them warm topped with the fresh strawberries and a drizzle of maple syrup. Enjoy your healthy treat!
