Ingredients

  • 2 medium-sized beetroots, peeled and cooked
  • 1 cup Greek yogurt (or plant-based yogurt for a vegan option)
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

  • 4 slices whole grain bread
  • 2 tablespoons olive oil
  • to taste Fresh herbs (like dill or parsley) for garnish
  • optional Crumbled feta cheese for topping

Instructions

  1. Begin by whipping the cooked beetroot: In a food processor, combine the cooked beetroot, Greek yogurt, tahini, lemon juice, minced garlic, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
  2. Toast the whole grain bread slices until golden brown and crispy.
  3. While the bread is toasting, prepare your whipped beetroot mixture if you haven’t done so already.
  4. Once the toast is ready, drizzle olive oil over each slice for added flavor.
  5. Spread a generous layer of the whipped beetroot mixture on top of each slice of toast.
  6. If desired, sprinkle crumbled feta cheese on top for a savory touch.
  7. Garnish with fresh herbs to add a pop of color and fresh flavor.

💡 Chef's Notes

Arrange the toast on a large serving platter and drizzle a little extra olive oil around the edges for a refined look. Serve with lemon wedges for added freshness.
