Ingredients

  • 15 oz canned chickpeas, drained and rinsed
  • 0.25 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 0.5 teaspoon ground cumin
  • to taste salt
  • as needed water
  • for garnish paprika and fresh parsley

Instructions

  1. In a food processor, combine the drained chickpeas, tahini, lemon juice, minced garlic, olive oil, cumin, and a pinch of salt.
  2. Process on high for about 1 minute. Scrape down the sides of the bowl and continue processing.
  3. Gradually add water, one tablespoon at a time, until you reach your desired creamy consistency.
  4. Taste and adjust seasoning by adding more salt or lemon juice as needed.
  5. Transfer the hummus to a serving bowl. Use the back of a spoon to create a shallow well in the center.
  6. Drizzle with additional olive oil and sprinkle with paprika and chopped fresh parsley for garnish.

Adjust seasoning to your taste and enjoy with pita or veggies.
