Ingredients

  • 1 pound ground beef
  • 1 2 ground pork
  • 1 cup breadcrumbs
  • 1 2 grated Parmesan cheese
  • 1 4 fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large egg
  • to taste salt and pepper
  • 2 cups marinara sauce
  • 4 pieces sub rolls
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • optional fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, egg, salt, and pepper. Mix until well combined.
  3. Take about 2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the meatballs on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for about 20-25 minutes or until they are cooked through and browned.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat. Once warm, add the baked meatballs to the sauce, letting them simmer for about 5-10 minutes to absorb the flavors.
  6. Cut the sub rolls down the center but not all the way through, creating a pocket. Brush the inside with olive oil and toast them in the oven for about 5 minutes until slightly crispy.
  7. Fill each toasted sub roll with several meatballs and top with marinara sauce. Sprinkle shredded mozzarella cheese generously over the top.
  8. Return the subs to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and garnish with fresh basil leaves if desired. Serve hot and enjoy!
