Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon sesame oil
  • 1 medium red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 stalks green onions, chopped
  • 1 tablespoon cornstarch (optional, for thickening)
  • to taste sesame seeds for garnish
  • as needed cooked rice or noodles for serving

Instructions

  1. In a small bowl, mix together the honey, soy sauce, minced garlic, grated ginger, and sesame oil. If you prefer a thicker sauce, whisk in the cornstarch until well combined. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add a splash of oil if needed. Add the sliced red bell pepper, broccoli florets, and snap peas. Stir fry the vegetables for about 3-4 minutes, until they are tender-crisp.
  4. Once the vegetables are ready, return the shrimp to the skillet and pour the honey garlic sauce over the mixture. Stir to combine and cook for another 2 minutes, allowing the flavors to meld.
  5. Remove from heat and garnish with chopped green onions and sesame seeds.
  6. Serve immediately over cooked rice or noodles, enjoying the delightful mix of flavors!
