Honey Lemon Glazed Carrots Healthy and Simple Recipe
Ingredients
- 1 pound baby carrots (or sliced regular carrots)
- 3 tablespoons honey
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 1 2 salt
- 1 4 black pepper

Instructions
- Begin by washing and peeling the carrots if using regular carrots. Cut them into even-sized pieces for uniform cooking.
- In a mixing bowl, whisk together the honey, lemon juice, olive oil, lemon zest, salt, and pepper until fully combined.
- Preheat your oven to 400°F (200°C).
- Place the carrots on a baking sheet lined with parchment paper.
- Pour the honey-lemon glaze over the carrots, and toss them well to ensure they are evenly coated with the mixture.
- Spread the carrots out in a single layer on the baking sheet for even roasting.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized.
- Once done, remove from the oven and let them cool for a few minutes. Then, transfer to a serving dish.
- Optional: Sprinkle freshly chopped parsley over the top for a burst of color and flavor.
