Ingredients

  • 1 pound baby carrots (or sliced regular carrots)
  • 3 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 2 salt
  • 1 4 black pepper
  • to taste fresh parsley for garnish (optional)

Instructions

  1. Begin by washing and peeling the carrots if using regular carrots. Cut them into even-sized pieces for uniform cooking.
  2. In a mixing bowl, whisk together the honey, lemon juice, olive oil, lemon zest, salt, and pepper until fully combined.
  3. Preheat your oven to 400°F (200°C).
  4. Place the carrots on a baking sheet lined with parchment paper.
  5. Pour the honey-lemon glaze over the carrots, and toss them well to ensure they are evenly coated with the mixture.
  6. Spread the carrots out in a single layer on the baking sheet for even roasting.
  7. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized.
  8. Once done, remove from the oven and let them cool for a few minutes. Then, transfer to a serving dish.
  9. Optional: Sprinkle freshly chopped parsley over the top for a burst of color and flavor.
