Ingredients

  • 6 pieces chicken thighs, skin-on and bone-in
  • 0.25 cup honey
  • 0.25 cup Dijon mustard
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, thyme, smoked paprika, salt, and pepper until well combined.
  3. Place the chicken thighs in a large baking dish or on a lined baking sheet. Pour the honey mustard mixture over the thighs, ensuring they are evenly coated.
  4. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden and crispy.
  5. Optional: For an extra caramelized finish, switch the oven to broil for the last 2-3 minutes, keeping a close eye to avoid burning.
  6. Remove from the oven and let the chicken rest for a few minutes before serving.
  7. Garnish with chopped fresh parsley before serving to add a pop of color and freshness.
