Ingredients

  • 4 fillets salmon (6 oz each)
  • 1 cup fresh pineapple, diced
  • 1 4 cup honey
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, grated
  • to taste salt and pepper
  • 2 green onions sliced (for garnish)
  • to taste sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the diced pineapple, honey, soy sauce, olive oil, minced garlic, and grated ginger. Stir well to create a marinade and set aside.
  3. Season the salmon fillets with salt and pepper on both sides.
  4. In an oven-safe skillet or cast-iron pan, heat a little olive oil over medium-high heat. Once hot, place the salmon fillets skin-side down and sear for about 3-4 minutes until the skin is crispy.
  5. Carefully flip the salmon fillets and pour the honey-pineapple marinade over the top.
  6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Once cooked, remove the salmon from the oven and let it rest for a couple of minutes.
  8. Serve the salmon fillets with the pineapple glaze drizzled over the top, garnished with sliced green onions and a sprinkle of sesame seeds.
