Instant Pot Coconut Rice Perfectly Fluffy Meal
Ingredients
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1 tablespoon sugar
- 1 teaspoon salt
- 0.5 cup unsweetened shredded coconut
- 2 tablespoons fresh cilantro
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In your Instant Pot, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir well.
- Close the Instant Pot lid and seal the vent. Set it to Pressure Cook on high for 4 minutes.
- Once the cooking time is complete, allow the pressure to naturally release for 10 minutes, then quick-release any remaining pressure.
- Open the lid and fluff the rice gently with a fork. Stir in the toasted shredded coconut, reserving a small amount for garnish.
- Serve the coconut rice warm, garnished with a sprinkle of toasted coconut and fresh cilantro on top.
