Ingredients

  • 2 cups mashed potatoes (preferably leftover)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup breadcrumbs (preferably panko)
  • for frying oil (vegetable or canola)

Instructions

  1. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined and smooth.
  2. Using your hands or a small ice cream scoop, form the potato mixture into small balls or puffs (about 1 bite-sized piece each) and place them on a baking sheet lined with parchment paper.
  3. Once all the mixture has been shaped into puffs, place the breadcrumbs in a shallow dish. Dip each potato puff into the breadcrumbs, making sure they are fully coated.
  4. In a large frying pan, heat about 1 inch of oil over medium heat until hot (around 350°F or 175°C).
  5. Carefully add a few puffs at a time into the hot oil, being cautious not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.
  6. Use a slotted spoon to remove the cheese puffs and place them on a paper towel-lined plate to drain excess oil.
  7. Repeat with the remaining potato puffs until all are fried.

Serve warm with sour cream or a tangy dipping sauce.
