Keto Mexican Beef Cauliflower Casserole Delight
Ingredients
- 1 lb ground beef
- 1 medium head cauliflower, riced
- 1 cup diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 0.5 teaspoon cumin
- 0.25 teaspoon paprika

- 0.5 cup chopped bell peppers
- optional fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
- Increase the heat to medium-high and add ground beef, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the taco seasoning, cumin, and paprika, combining well with the beef. Add the diced tomatoes and bell peppers, mixing to incorporate. Allow to simmer for about 5 minutes. Season with salt and pepper to taste.
- In a large bowl, mix the riced cauliflower with half of the shredded cheese.
- In a greased 9x13 inch baking dish, layer the cauliflower cheese mixture on the bottom.
- Pour the ground beef mixture over the cauliflower layer, spreading it evenly.
- Top the casserole with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and slightly golden.
- Remove from the oven and let it sit for 5 minutes before serving.
- Garnish with fresh cilantro if desired.
