Ingredients

  • 1 lb ground beef
  • 1 medium head cauliflower, riced
  • 1 cup diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 0.5 teaspoon cumin
  • 0.25 teaspoon paprika
  • to taste salt and pepper
  • 0.5 cup chopped bell peppers
  • optional fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Increase the heat to medium-high and add ground beef, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the taco seasoning, cumin, and paprika, combining well with the beef. Add the diced tomatoes and bell peppers, mixing to incorporate. Allow to simmer for about 5 minutes. Season with salt and pepper to taste.
  6. In a large bowl, mix the riced cauliflower with half of the shredded cheese.
  7. In a greased 9x13 inch baking dish, layer the cauliflower cheese mixture on the bottom.
  8. Pour the ground beef mixture over the cauliflower layer, spreading it evenly.
  9. Top the casserole with the remaining cheese.
  10. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and slightly golden.
  11. Remove from the oven and let it sit for 5 minutes before serving.
  12. Garnish with fresh cilantro if desired.
