Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons olive oil
  • 0.25 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • skewers Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to use)

Instructions

  1. In a medium bowl, combine the lemon juice, lemon zest, olive oil, chopped basil, minced garlic, salt, black pepper, and paprika. Whisk the marinade until well blended.
  2. Add the cubed chicken to the marinade, making sure each piece is well coated. Cover with plastic wrap and refrigerate for at least 30 minutes to 2 hours for optimal flavor.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread marinated chicken onto skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F/75°C).
  6. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.

💡 Chef's Notes

Serve the skewers on a platter with fresh basil leaves and lemon wedges for a vibrant touch.
