Lemon Garlic Herb Chicken Skewers Flavorful Delight
Ingredients
- 2 lbs chicken breast, cut into 1-inch cubes
- 4 cloves of garlic, minced
- 3 tablespoons olive oil
- 1 lemon zest of
- 2 lemons juice of
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- to taste salt and pepper
- for garnish fresh parsley, chopped
- as needed skewers (wooden or metal)
Instructions
- In a large mixing bowl, combine the minced garlic, olive oil, lemon zest, lemon juice, oregano, thyme, smoked paprika, salt, and pepper. Whisk together until well blended.
- Add the cubed chicken breast to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour (or up to overnight for better flavor).
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. Chicken should reach an internal temperature of 165°F (75°C).
- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
- Garnish the chicken skewers with fresh chopped parsley for an extra pop of color.
