Ingredients

  • 2 lbs chicken breast, cut into 1-inch cubes
  • 4 cloves of garlic, minced
  • 3 tablespoons olive oil
  • 1 lemon zest of
  • 2 lemons juice of
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped
  • as needed skewers (wooden or metal)

Instructions

  1. In a large mixing bowl, combine the minced garlic, olive oil, lemon zest, lemon juice, oregano, thyme, smoked paprika, salt, and pepper. Whisk together until well blended.
  2. Add the cubed chicken breast to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour (or up to overnight for better flavor).
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  6. Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. Chicken should reach an internal temperature of 165°F (75°C).
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
  8. Garnish the chicken skewers with fresh chopped parsley for an extra pop of color.

💡 Chef's Notes

Serve the skewers on a platter with lemon wedges and a sprinkle of additional parsley. Pair with a fresh salad or a side of grilled vegetables for a complete meal.
