Ingredients

  • 1 pound fresh asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon zest of
  • 1 lemon juice of
  • to taste salt and pepper
  • 0.25 cup grated Parmesan cheese (optional)
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the trimmed asparagus, olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper. Toss well to ensure the asparagus is evenly coated.
  3. Spread the asparagus in a single layer on a baking sheet lined with parchment paper.
  4. Roast the asparagus in the preheated oven for 15-20 minutes, until they are tender and lightly browned.
  5. If using, sprinkle the grated Parmesan cheese over the asparagus during the last 5 minutes of roasting to allow it to melt.
  6. Once done, remove from the oven and let cool slightly.
  7. Transfer the roasted asparagus to a serving platter and garnish with freshly chopped parsley.

💡 Chef's Notes

For an extra flavor boost, add more garlic or lemon juice as desired.
