Lemon Garlic Roasted Asparagus Flavorful Side Dish
Ingredients
- 1 pound fresh asparagus, trimmed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon zest of
- 1 lemon juice of
- to taste salt and pepper
- 0.25 cup grated Parmesan cheese (optional)
- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the trimmed asparagus, olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper. Toss well to ensure the asparagus is evenly coated.
- Spread the asparagus in a single layer on a baking sheet lined with parchment paper.
- Roast the asparagus in the preheated oven for 15-20 minutes, until they are tender and lightly browned.
- If using, sprinkle the grated Parmesan cheese over the asparagus during the last 5 minutes of roasting to allow it to melt.
- Once done, remove from the oven and let cool slightly.
- Transfer the roasted asparagus to a serving platter and garnish with freshly chopped parsley.
