Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 lemon zest of
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 1 4 cup grated Parmesan cheese (optional)
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the halved Brussels sprouts, minced garlic, olive oil, lemon zest, lemon juice, thyme, salt, and pepper. Toss well to coat the Brussels sprouts evenly.
  3. Spread the seasoned Brussels sprouts in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the edges, stirring halfway through for even cooking.
  5. If using, sprinkle the grated Parmesan cheese over the Brussels sprouts during the last 5 minutes of cooking, allowing it to melt and turn golden.
  6. Once done, remove from the oven and let cool for a couple of minutes before transferring to a serving dish.
  7. Garnish with freshly chopped parsley for added color and flavor.

💡 Chef's Notes

Optional to add Parmesan cheese for extra flavor.
