Ingredients

  • 4 pieces boneless chicken breasts
  • 0.25 cup olive oil
  • 1 piece zest of lemon
  • 0.25 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon honey (optional)
  • lemon slices and fresh herb sprigs for garnish

Instructions

  1. In a mixing bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, thyme, rosemary, salt, pepper, and honey (if using) until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, ensuring the chicken is well coated.
  3. Marinate the chicken in the refrigerator for at least 1 hour, preferably 3-4 hours for optimal flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade, letting any excess marinade drip off. Discard the marinade.
  6. Grill the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
  7. Once cooked, remove from the grill and let it rest for 5 minutes before slicing.
  8. Garnish with lemon slices and fresh herb sprigs before serving.

💡 Chef's Notes

Arrange the grilled chicken on a platter, drape with additional fresh herbs, and serve with lemon slices for a bright, appetizing look. Pair with a fresh garden salad or grilled vegetables for a complete meal.
