Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 2 lemons Juice
  • 1 lemon Zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon red pepper flakes (optional)
  • to taste Salt and black pepper
  • for garnish Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, red pepper flakes (if using), salt, and black pepper. Whisk until well mixed to create your marinade.
  2. Add the cleaned shrimp to the bowl, ensuring they are coated evenly with the marinade. Cover and refrigerate for 30 minutes to allow the flavors to meld.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Skewering the shrimp helps prevent them from falling through the grates. Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer.
  5. Place the shrimp skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque. Avoid overcooking, as shrimp can become rubbery.
  6. Once cooked, remove the shrimp from the grill. Let them rest for a minute before serving.
  7. Garnish with fresh chopped parsley for a pop of color and added flavor.
