Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 0.25 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons poppy seeds
  • 0.5 cup plain Greek yogurt
  • 0 optional Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another large bowl, cream the softened butter and granulated sugar until light and fluffy using a hand mixer or stand mixer.
  4. Add in the eggs, one at a time, mixing well after each addition. Then stir in the lemon zest, lemon juice, and vanilla extract.
  5. Gradually add in the dry ingredients to the butter mixture, alternating with Greek yogurt. Begin and end with the flour mixture. Stir until just combined.
  6. Finally, gently fold in the poppy seeds until evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Dust with powdered sugar before slicing and serving, if desired.
