Lemon Poppy Seed Bread Flavorful and Simple Recipe
Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
- 0.5 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In another large bowl, cream the softened butter and granulated sugar until light and fluffy using a hand mixer or stand mixer.
- Add in the eggs, one at a time, mixing well after each addition. Then stir in the lemon zest, lemon juice, and vanilla extract.
- Gradually add in the dry ingredients to the butter mixture, alternating with Greek yogurt. Begin and end with the flour mixture. Stir until just combined.
- Finally, gently fold in the poppy seeds until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar before slicing and serving, if desired.
