Ingredients

  • 2 whole ripe mangos, diced
  • 1 medium red onion, finely chopped
  • 1 whole red bell pepper, finely diced
  • 1 whole jalapeño, deseeded and minced
  • 0.25 cup fresh cilantro, chopped
  • 2 whole limes, juiced
  • 1 tablespoon olive oil
  • to taste salt

Instructions

  1. Begin by peeling and dicing the ripe mangos into small cubes. Place them in a mixing bowl.
  2. Chop the red onion and red bell pepper into small pieces, and add them to the bowl with the mango.
  3. Carefully mince the jalapeño, making sure to remove the seeds for a milder taste, and add it to the bowl.
  4. Add the chopped cilantro to the mixture.
  5. Squeeze the juice of two limes over the salsa mix.
  6. Drizzle the olive oil on top and sprinkle with salt to taste.
  7. Gently toss all the ingredients together until evenly mixed, being careful not to mush the mango cubes.
  8. Taste and adjust the seasoning if necessary, adding more salt or lime juice as needed.

💡 Chef's Notes

Serve in a decorative bowl or on a platter with tortilla chips. Garnish with whole cilantro leaves and lime wedges.
