Ingredients

  • 4 medium sweet potatoes, peeled and diced
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons pure maple syrup
  • 1 teaspoon cinnamon
  • 1 2 nutmeg
  • to taste salt and pepper
  • 1 4 cup chopped pecans (optional)
  • for garnish fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the diced sweet potatoes with melted butter, maple syrup, cinnamon, nutmeg, salt, and pepper. Toss everything until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. If using, sprinkle the chopped pecans on top for added crunch and flavor.
  4. Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through for even cooking.
  5. Once done, remove from the oven and let cool for a few minutes before transferring to a serving dish.
  6. Garnish with fresh parsley if desired for a pop of color and freshness.

💡 Chef's Notes

For added flavor, consider using fresh herbs as a garnish.
