Ingredients

  • 1 pound Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 0.25 cup pure maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • to taste Salt and freshly ground black pepper
  • 0.25 cup chopped pecans (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the halved Brussels sprouts, olive oil, maple syrup, balsamic vinegar, garlic powder, salt, and pepper. Toss until the sprouts are well coated.
  3. Spread the Brussels sprouts out evenly on the prepared baking sheet, making sure they are in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are tender and caramelized.
  5. If using pecans, add them to the baking sheet for the last 5 minutes of roasting to toast lightly.
  6. Once done, remove from the oven and transfer the Brussels sprouts to a serving bowl.
  7. Garnish with chopped parsley before serving. Enjoy your sweet and savory side dish!
