Ingredients

  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 0.5 cup shredded cheese (cheddar or mozzarella)
  • 0.25 cup milk (or almond milk)
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions

  1. In a microwave-safe mug or bowl, add the frozen mixed vegetables and drizzle with olive oil.
  2. Pour in the milk and stir gently to combine.
  3. Microwave on high for 2-3 minutes, or until the vegetables are heated through. Stir halfway through to ensure even cooking.
  4. After microwaving, stir in the shredded cheese until melted and creamy.
  5. Season with salt and pepper to taste, mixing well before serving.
