Ingredients

  • 2 cups rolled oats
  • 1 cup sunflower seeds
  • 0.5 cup pumpkin seeds
  • 0.5 cup dried cranberries
  • 0.5 cup honey or maple syrup
  • 0.25 cup coconut oil, melted
  • 0.5 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 0.25 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish (8x8 inches) with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the rolled oats, sunflower seeds, pumpkin seeds, cranberries, cinnamon, and salt. Mix well to ensure everything is evenly distributed.
  3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until fully combined.
  4. Pour the wet ingredients into the dry mixture and stir until all the ingredients are evenly coated.
  5. Transfer the mixture into the prepared baking dish and press it down firmly with the back of a spatula or your hands to create an even layer.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  7. Once done, remove from the oven and allow to cool in the baking dish for about 10 minutes. Then, lift out the granola using the parchment paper overhang and place it on a wire rack to cool completely.
  8. Once entirely cooled, cut into bars of your desired size and store them in an airtight container.
