Ingredients

  • 4 links sausage (chicken, turkey, or plant-based)
  • 2 cups bell peppers (assorted colors), sliced
  • 1 medium red onion, sliced
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the sliced sausages, bell peppers, red onion, zucchinis, and cherry tomatoes.
  3. Drizzle the olive oil over the ingredients and sprinkle with minced garlic, oregano, smoked paprika, salt, and pepper. Toss everything together until well coated.
  4. Transfer the mixture to a large baking sheet, spreading it out in a single layer for even cooking.
  5. Bake in the preheated oven for 25-30 minutes or until the sausages are cooked through and the vegetables are tender, stirring halfway through for even roasting.
  6. Once done, remove from the oven and let it cool for a few minutes.
  7. Garnish with chopped fresh parsley before serving.

💡 Chef's Notes

Serve directly from the pan for a rustic look or transfer to a large serving platter. Drizzle with a bit more olive oil and garnish with additional herbs for a pop of freshness.
