One-Pan Sausage and Veggies Simple and Quick Meal
Ingredients
- 4 links sausage (chicken, turkey, or plant-based)
- 2 cups bell peppers (assorted colors), sliced
- 1 medium red onion, sliced
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika

- for garnish fresh parsley, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the sliced sausages, bell peppers, red onion, zucchinis, and cherry tomatoes.
- Drizzle the olive oil over the ingredients and sprinkle with minced garlic, oregano, smoked paprika, salt, and pepper. Toss everything together until well coated.
- Transfer the mixture to a large baking sheet, spreading it out in a single layer for even cooking.
- Bake in the preheated oven for 25-30 minutes or until the sausages are cooked through and the vegetables are tender, stirring halfway through for even roasting.
- Once done, remove from the oven and let it cool for a few minutes.
- Garnish with chopped fresh parsley before serving.
