Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 2 tablespoons fresh parsley, finely chopped
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 large eggs
  • to taste salt and pepper
  • 0.25 cup olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine.
  3. In another shallow bowl, beat the eggs until well mixed.
  4. Take each chicken breast and season both sides with salt and pepper.
  5. Dip each chicken breast into the beaten eggs, ensuring it’s fully coated.
  6. Next, place the chicken in the breadcrumb and cheese mixture, pressing firmly to coat both sides thoroughly.
  7. In a large skillet over medium-high heat, add the olive oil. Once hot, carefully add the breaded chicken breasts, cooking for about 3-4 minutes per side until golden brown.
  8. Transfer the browned chicken breasts to a baking sheet lined with parchment paper.
  9. Bake the chicken in the preheated oven for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  10. Once out of the oven, let the chicken rest for 5 minutes before serving.
