Ingredients

  • 2 whole ripe peaches, thinly sliced
  • 1 cup mixed berries (such as blueberries, raspberries, or strawberries)
  • 1 4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 whole pre-made pie crust (or homemade if preferred)
  • 1 whole egg (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)
  • 1 pinch salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced peaches, mixed berries, granulated sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Gently toss to coat the fruit evenly and set aside.
  3. Roll out the pre-made pie crust on a floured surface into a rough circle about 12-inches in diameter. Transfer the crust to a baking sheet lined with parchment paper.
  4. Spoon the fruit mixture into the center of the pie crust, leaving a generous 2-inch border around the edges.
  5. Fold the edges of the crust over the fruit, pleating it to create a rustic edge.
  6. In a small bowl, beat the egg and brush the mixture over the exposed crust to give it a golden finish.
  7. Sprinkle the coarse sugar over the crust for added texture and sweetness.
  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the fruit is bubbly.
  9. Allow the galette to cool slightly before slicing and serving.
