Ingredients
- 2 whole ripe peaches, thinly sliced

Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sliced peaches, mixed berries, granulated sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Gently toss to coat the fruit evenly and set aside.
- Roll out the pre-made pie crust on a floured surface into a rough circle about 12-inches in diameter. Transfer the crust to a baking sheet lined with parchment paper.
- Spoon the fruit mixture into the center of the pie crust, leaving a generous 2-inch border around the edges.
- Fold the edges of the crust over the fruit, pleating it to create a rustic edge.
- In a small bowl, beat the egg and brush the mixture over the exposed crust to give it a golden finish.
- Sprinkle the coarse sugar over the crust for added texture and sweetness.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the fruit is bubbly.
- Allow the galette to cool slightly before slicing and serving.
