Ingredients

  • 2 cups fresh peaches, peeled and sliced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 2 cups brown sugar
  • 1 2 cups granulated sugar
  • 1 2 cup unsalted butter, melted
  • 1 tsp baking powder
  • 1 2 tsp cinnamon
  • 1 4 tsp salt
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, combine the sliced peaches with lemon juice and 1/4 cup of granulated sugar. Set aside to let the juices meld while you prepare the crust and topping.
  3. In another bowl, mix together the flour, rolled oats, brown sugar, baking powder, cinnamon, and salt.
  4. Pour in the melted butter and vanilla extract, stirring until the mixture resembles coarse crumbs. If using pecans, fold them into the mixture.
  5. Press about two-thirds of the oat mixture into the bottom of the prepared baking pan to form a crust.
  6. Spread the peach mixture evenly over the crust, then crumble the remaining oat mixture over the top.
  7. Bake in the preheated oven for about 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Once baked, remove from the oven and let cool in the pan for at least 15 minutes before lifting out using the parchment paper.
  9. Cut into bars and serve warm, or allow to cool completely for easier cutting.
