Ingredients

  • 1 piece ripe peach, diced
  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 0.25 teaspoon baking powder
  • 0.125 teaspoon salt
  • 3 tablespoons milk
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon brown sugar (for topping)
  • 1 serving Whipped cream or vanilla ice cream (optional, for serving)

Instructions

  1. In a microwave-safe mug, combine the flour, granulated sugar, baking powder, salt, and cinnamon. Whisk together until fully blended.
  2. Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until you have a smooth batter.
  3. Gently fold in the diced peach until evenly distributed throughout the batter.
  4. Sprinkle the brown sugar on top of the batter for a caramelized finish.
  5. Microwave the mug for 1 to 1.5 minutes. Start with 1 minute, then check for doneness; the cake should be set and spring back when touched. If needed, add additional 15-second increments until cooked.
  6. Allow the mug cake to cool for a minute before enjoying. If desired, top with whipped cream or a scoop of vanilla ice cream for an extra treat.
