Ingredients

  • 1 cup coconut milk
  • 0.5 cup unsweetened pineapple juice
  • 0.25 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 0.5 teaspoon vanilla extract
  • 0.5 cup diced fresh pineapple
  • shredded coconut for garnish
  • mint leaves for garnish (optional)

Instructions

  1. In a large mixing bowl, whisk together the coconut milk, pineapple juice, honey (or maple syrup), and vanilla extract until well combined.
  2. Slowly sprinkle the chia seeds into the mixture while continuously whisking to prevent clumping.
  3. Once all the chia seeds are incorporated, cover the bowl with plastic wrap or a lid, and refrigerate for at least 4 hours, or overnight, to allow the pudding to thicken.
  4. After the pudding has set and thickened, give it a good stir to break up any clumps.
  5. To serve, scoop the chia pudding into individual serving bowls or glasses. Top with diced fresh pineapple and a sprinkle of shredded coconut.
  6. For an extra touch, garnish with a mint leaf.

Adjust sweetness to taste with honey or maple syrup.
