Pumpkin Spice Energy Bites Nutritious and Easy Treat
Ingredients
- 1 cup rolled oats
- 0.5 cup pumpkin puree
- 0.25 cup almond butter (or peanut butter)
- 0.25 cup honey or maple syrup
- 1 teaspoon pumpkin spice mix (or a blend of cinnamon, nutmeg, and ginger)
- 0.5 teaspoon vanilla extract
- 0.25 cup ground flaxseed
- 0.25 cup dark chocolate chips (optional)

Instructions
- In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
- Add the pumpkin spice mix, ground flaxseed, and a pinch of salt to the bowl. Stir until everything is evenly incorporated.
- If desired, fold in the dark chocolate chips for an extra treat.
- Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter. If the mixture is too sticky, you can refrigerate it for about 10-15 minutes to make it easier to handle.
- Place the energy bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
- Once set, transfer the bites to an airtight container and store them in the refrigerator for up to a week.
