Ingredients

  • 1 cup rolled oats
  • 0.5 cup pumpkin puree
  • 0.25 cup almond butter (or peanut butter)
  • 0.25 cup honey or maple syrup
  • 1 teaspoon pumpkin spice blend (cinnamon, nutmeg, ginger, cloves)
  • 0.25 teaspoon salt
  • 0.25 cup ground flaxseeds
  • 0.25 cup mini dark chocolate chips (optional)
  • 0.25 cup chopped walnuts or pecans (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, and honey (or maple syrup).
  2. Add the pumpkin spice blend, salt, and ground flaxseeds to the mixture. Mix until everything is well combined.
  3. If desired, fold in the mini dark chocolate chips and chopped nuts for an extra crunch.
  4. Once the mixture is thoroughly combined, use your hands (or a cookie scoop) to form small balls, about 1 to 1.5 inches in diameter.
  5. Place the energy bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to set.
  6. After chilling, transfer the energy bites to an airtight container. Store them in the refrigerator for up to a week.
