Pumpkin Spice Energy Bites Tasty and Easy Snack
Ingredients
- 1 cup rolled oats
- 0.5 cup pumpkin puree
- 0.25 cup almond butter (or peanut butter)
- 0.25 cup honey or maple syrup
- 1 teaspoon pumpkin spice blend (cinnamon, nutmeg, ginger, cloves)
- 0.25 teaspoon salt
- 0.25 cup ground flaxseeds
- 0.25 cup mini dark chocolate chips (optional)
- 0.25 cup chopped walnuts or pecans (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, and honey (or maple syrup).
- Add the pumpkin spice blend, salt, and ground flaxseeds to the mixture. Mix until everything is well combined.
- If desired, fold in the mini dark chocolate chips and chopped nuts for an extra crunch.
- Once the mixture is thoroughly combined, use your hands (or a cookie scoop) to form small balls, about 1 to 1.5 inches in diameter.
- Place the energy bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to set.
- After chilling, transfer the energy bites to an airtight container. Store them in the refrigerator for up to a week.
