Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 2 cups baby potatoes, halved
  • 1 cup green beans, trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • to taste salt and pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut four large pieces of aluminum foil, about 12 inches long, and lay them flat on a work surface.
  3. In a large bowl, combine the halved baby potatoes, green beans, olive oil, ranch seasoning mix, salt, and pepper. Mix well until the vegetables are coated.
  4. Place one chicken breast in the center of each piece of foil.
  5. Evenly distribute the seasoned vegetable mixture around the chicken on each packet.
  6. If using, top each chicken breast with shredded cheddar cheese.
  7. Fold the edges of the foil tightly to seal the packets, making sure there are no openings.
  8. Place the packets directly on the oven rack or a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  9. Carefully open the packets, avoiding the escaping steam, and garnish with fresh parsley before serving.
