Ranch Chicken Foil Packets Quick and Easy Dinner
Ingredients
- 2 pieces boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 2 cups baby potatoes, halved
- 1 cup green beans, trimmed
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)

- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut four large pieces of aluminum foil, about 12 inches long, and lay them flat on a work surface.
- In a large bowl, combine the halved baby potatoes, green beans, olive oil, ranch seasoning mix, salt, and pepper. Mix well until the vegetables are coated.
- Place one chicken breast in the center of each piece of foil.
- Evenly distribute the seasoned vegetable mixture around the chicken on each packet.
- If using, top each chicken breast with shredded cheddar cheese.
- Fold the edges of the foil tightly to seal the packets, making sure there are no openings.
- Place the packets directly on the oven rack or a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Carefully open the packets, avoiding the escaping steam, and garnish with fresh parsley before serving.
