Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 0.5 cup honey or maple syrup
  • 0.5 cup almond butter
  • 1 cup fresh raspberries (or frozen, thawed)
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal.
  2. In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Mix well to combine.
  3. In another bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients, combining thoroughly with a spatula. Fold in the fresh raspberries gently, mixing just until incorporated.
  5. Pour the mixture into the prepared baking pan, spreading it evenly with a spatula. Press the mixture firmly down to ensure it sticks together well.
  6. Sprinkle the sliced almonds evenly over the top for added crunch.
  7. Bake in the preheated oven for 25-30 minutes or until the edges are golden brown.
  8. Remove from the oven and let cool in the pan for about 10-15 minutes before using the parchment paper to lift it out.
  9. Allow it to cool completely on a wire rack before cutting into bars.

💡 Chef's Notes

Serve the bars on a rustic wooden board, and garnish with a few fresh raspberries on the side for a pop of color. Enjoy your healthy snack!
