Raspberry Almond Oat Bars Healthy Snack Option
Ingredients
- 2 cups rolled oats
- 1 cup almond flour
- 0.5 cup honey or maple syrup
- 0.5 cup almond butter
- 1 cup fresh raspberries (or frozen, thawed)
- 1 teaspoon vanilla extract
- 0.5 teaspoon baking powder
- 0.25 teaspoon salt
- 0.25 cup sliced almonds (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal.
- In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. Mix well to combine.
- In another bowl, whisk together the honey (or maple syrup), almond butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients, combining thoroughly with a spatula. Fold in the fresh raspberries gently, mixing just until incorporated.
- Pour the mixture into the prepared baking pan, spreading it evenly with a spatula. Press the mixture firmly down to ensure it sticks together well.
- Sprinkle the sliced almonds evenly over the top for added crunch.
- Bake in the preheated oven for 25-30 minutes or until the edges are golden brown.
- Remove from the oven and let cool in the pan for about 10-15 minutes before using the parchment paper to lift it out.
- Allow it to cool completely on a wire rack before cutting into bars.
