Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 4 cloves of garlic, roasted
  • 1 4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 2 teaspoon ground cumin
  • to taste Salt Salt
  • as needed Water Water
  • for garnish Paprika and extra olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off a whole bulb of garlic, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft and caramelized.
  2. In a food processor, combine the drained chickpeas, roasted garlic (squeeze the cloves out of their skins), tahini, olive oil, lemon juice, ground cumin, and a pinch of salt.
  3. Blend the mixture until smooth, scraping down the sides as needed. If the hummus is too thick, add water a tablespoon at a time until the desired consistency is reached.
  4. Taste and adjust seasoning and lemon juice according to your preference.
  5. Transfer the hummus to a serving bowl, create a swirl in the center, and drizzle with extra olive oil. Sprinkle paprika over the top for a pop of color.

💡 Chef's Notes

Serve with warm pita bread, fresh veggie sticks, or crispy pita chips. A sprinkle of chopped parsley or a few whole chickpeas on top can add an extra touch of elegance!
