Instructions

  1. Start by toasting the whole grain bread slices to your desired crispiness.
  2. While the bread is toasting, cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.
  3. Mash the avocados with a fork until smooth, leaving some chunky bits for texture.
  4. Drizzle in the olive oil and season with salt and pepper to taste. Mix until well combined.
  5. Once the bread is toasted, spread a generous layer of the mashed avocado onto each slice.
  6. Top the avocado layer evenly with the crumbled feta cheese.
  7. Scatter the halved cherry tomatoes over the feta, pressing them down slightly to adhere.
  8. Drizzle with balsamic glaze and sprinkle with crushed red pepper flakes if you like some heat.
  9. Finish by adding fresh basil leaves on top for a touch of flavor and color.
  10. Serve immediately and enjoy the delightful combination of flavors!
