Ingredients
- 1.5 cups all-purpose flour

- 1 cup buttermilk

Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
- In a medium bowl, combine the flour, baking powder, baking soda, salt, black pepper, and optional paprika. Mix well to combine the dry ingredients.
- In a separate larger bowl, whisk together the eggs, buttermilk, and olive oil until fully blended.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined—do not overmix; small lumps are okay.
- Fold in the cheddar cheese, crumbled bacon, chopped spinach, and chives until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake in the preheated oven for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
