Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 large eggs
  • 1 cup buttermilk
  • 0.25 cup olive oil
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup cooked and crumbled turkey bacon
  • 0.5 cup chopped fresh spinach
  • 1 teaspoon fresh chives, finely chopped
  • 0.5 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a medium bowl, combine the flour, baking powder, baking soda, salt, black pepper, and optional paprika. Mix well to combine the dry ingredients.
  3. In a separate larger bowl, whisk together the eggs, buttermilk, and olive oil until fully blended.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined—do not overmix; small lumps are okay.
  5. Fold in the cheddar cheese, crumbled bacon, chopped spinach, and chives until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Bake in the preheated oven for 18-22 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
