Ingredients

  • 1 cup rolled oats
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup kale or spinach, chopped
  • 1 medium tomato, diced
  • 1 avocado sliced
  • 2 tablespoons nutritional yeast
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh herbs (like parsley or cilantro)

Instructions

  1. In a saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 4-5 minutes.
  2. Stir in the minced garlic and sauté for an additional minute until fragrant.
  3. Add the vegetable broth to the saucepan and bring it to a boil.
  4. Once boiling, stir in the rolled oats, reduce the heat to low, and simmer for about 5-7 minutes, or until the oats are cooked and creamy.
  5. In the last minute of cooking, fold in the chopped kale or spinach and diced tomato, allowing them to wilt slightly.
  6. Stir in the nutritional yeast, smoked paprika, salt, and pepper, adjusting the seasoning according to taste.
  7. Once everything is well combined and warmed through, remove the saucepan from heat.
  8. Serve the savory oatmeal in bowls, topped with sliced avocado and a sprinkle of fresh herbs on top for a vibrant finish.
