Savory Sweet Potato Hash Easy and Flavorful Dish
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 each red bell pepper, diced
- 1 each green bell pepper, diced
- 1 small red onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 0.5 teaspoon cumin
- 0.5 teaspoon chili powder

- 2 tablespoons olive oil
- 4 large eggs (optional, for topping)
- to taste fresh cilantro or parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced sweet potatoes and season with salt, pepper, and smoked paprika. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes begin to soften.
- Stir in the chopped red onion, and cook for an additional 5 minutes, until the onion becomes translucent.
- Add in the diced red and green bell peppers, garlic, cumin, and chili powder. Mix well and continue to cook, stirring frequently, for another 8-10 minutes until all vegetables are tender and slightly caramelized.
- For a delicious twist, create small wells in the hash and crack an egg into each well. Cover the skillet and let it cook for about 5 minutes, or until the eggs reach your desired doneness.
- Once cooked, remove from heat and garnish with freshly chopped cilantro or parsley. Serve hot.
