Ingredients

  • 4 fillets salmon (about 6 oz each)
  • 1 tablespoon olive oil
  • 0 Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 lemon Juice of
  • 0.5 cup grated Parmesan cheese
  • 0 Fresh basil leaves for garnish

Instructions

  1. Prep the Salmon: Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. Sear the Salmon: In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin side down. Sear for about 4-5 minutes until crispy, then carefully flip and cook for another 3-4 minutes until cooked through. Remove salmon from the skillet and set aside.
  3. Sauté Aromatics: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. (If there's excess oil, feel free to drain a little.)
  4. Add Vegetables: Stir in cherry tomatoes and cook for 2-3 minutes until they start to blister, then add in the spinach leaves. Cook for 1 minute until wilted.
  5. Prepare the Creamy Sauce: Pour in the heavy cream, followed by the Italian seasoning, lemon juice, and grated Parmesan cheese. Stir well and let it simmer for about 3-5 minutes, allowing the sauce to thicken slightly. Taste and adjust seasonings as needed.
  6. Combine: Gently return the seared salmon fillets to the skillet, spooning the creamy sauce over them to coat well. Let them warm through for another 2 minutes.
  7. Serve: Plate the salmon adorned with the sauce and vegetables, garnishing with fresh basil leaves for an aromatic finish.

💡 Chef's Notes

Serve on a white platter for contrast, drizzling extra creamy sauce over the salmon and arranging the cherry tomatoes around the plate. A sprinkle of additional Parmesan and fresh basil on top will enhance the visual appeal!
