Slow Cooker Beef and Sweet Potato Stew Hearty Meal
Ingredients
- 2 lbs lean beef chuck, cut into 1-inch cubes
- 2 large sweet potatoes, peeled and diced
- 3 large carrots, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 2 leaves bay leaves

- 2 tablespoons olive oil
- for garnish fresh parsley
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the cubed beef and sear until browned on all sides, about 5-7 minutes. Transfer the beef to the slow cooker.
- In the same skillet, add the onion and garlic. Sauté for 2-3 minutes until fragrant and slightly softened. Add the carrots and sweet potatoes, cooking for an additional 3-4 minutes. Transfer to the slow cooker.
- Pour in the beef broth and Worcestershire sauce. Add the dried thyme, smoked paprika, cumin, bay leaves, and season with salt and pepper. Stir to combine all the ingredients in the slow cooker.
- Set the slow cooker on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the sweet potatoes are cooked through.
- Once done, taste and adjust seasoning if necessary. Remove bay leaves before serving.
- Ladle the hearty beef and sweet potato stew into bowls and garnish with fresh parsley.
