Spicy Cajun Chicken Pasta Flavorful and Quick Recipe
Ingredients
- 2 pieces boneless, skinless chicken breasts, sliced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 piece bell pepper (red or yellow), sliced
- 1 cup Cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces penne pasta
- 1 cup grated Parmesan cheese
- 1 tablespoon Fresh parsley, chopped (for garnish)
- 1 to taste Salt
- 1 to taste Pepper
- 1 teaspoon red pepper flakes (optional)
Instructions
- In a bowl, toss the sliced chicken breasts with Cajun seasoning, making sure they are evenly coated. Set aside.
- In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the diced onion and garlic. Sauté for 2 minutes until fragrant, then add the sliced bell pepper and cherry tomatoes. Cook for an additional 5 minutes until the vegetables are soft.
- Lower the heat to medium, and pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
- Add the cooked penne pasta and the sautéed chicken back into the skillet. Stir well to combine, then add the grated Parmesan cheese. Mix until the cheese is melted and the pasta is coated in the creamy sauce.
- Taste and adjust the seasoning with salt, pepper, and red pepper flakes if desired.
- Remove from heat and serve immediately, garnished with fresh chopped parsley.
