Ingredients

  • 2 cups edamame in pods, frozen or fresh
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lemon juice
  • to taste sea salt
  • for garnish toasted sesame seeds
  • for garnish thinly sliced green onions

Instructions

  1. If using frozen edamame, cook according to package instructions until tender. Drain and set aside. If using fresh edamame, boil them in a pot of salted water for about 5 minutes, then drain.
  2. In a large skillet, heat the olive oil over medium heat until shimmering.
  3. Reduce the heat to medium-low and add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, or until the garlic is fragrant but not browned.
  4. Add the cooked edamame to the skillet and stir to coat them in the garlic oil mixture.
  5. Pour in the soy sauce and sesame oil, stirring well to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Remove from heat and drizzle with lemon juice. Toss to ensure the edamame are evenly coated.
  7. Sprinkle with sea salt to taste, and stir to combine.

Serve garnished with toasted sesame seeds and sliced green onions for added flavor.
