Ingredients

  • 1 French baguette sliced into 1/2-inch rounds
  • 2 cups fresh strawberries, hulled and diced
  • 1 4 cup fresh basil leaves, finely chopped
  • 3 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • 1 clove garlic, halved
  • to taste salt and pepper
  • optional Feta cheese or fresh mozzarella for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices in a single layer on a baking sheet. Brush each slice lightly with olive oil on both sides.
  3. Toast the baguette slices in the oven for about 5-7 minutes, or until they are golden brown and crispy.
  4. While the bread is toasting, prepare the strawberry mixture. In a bowl, combine the diced strawberries and chopped basil.
  5. Drizzle the balsamic glaze over the strawberry and basil mixture and gently toss until everything is well-coated. Season with salt and pepper to taste.
  6. Once the baguette slices are toasted, remove them from the oven. Use the cut side of the garlic clove to rub onto each slice to infuse flavor.
  7. Top each toasted baguette slice with a generous spoonful of the strawberry-basil mixture.
  8. If desired, sprinkle crumbled feta cheese or small pieces of fresh mozzarella over the top for added creaminess.
  9. Serve the bruschetta immediately as an appetizer or snack, garnished with extra basil if desired.
