Strawberry Shortcake Parfaits Delightful Summer Treat
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 3 tablespoons granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- 2 cups store-bought shortcake or homemade vanilla sponge cake, crumbled

Instructions
- In a medium bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Toss gently and let sit for about 15-20 minutes to allow the strawberries to release their juices.
- In a separate mixing bowl, combine the heavy whipping cream, vanilla extract, and remaining 1 tablespoon of granulated sugar. Whip the cream on medium speed until soft peaks form, then add the powdered sugar and continue to whip until stiff peaks form.
- In serving glasses or bowls, start by adding a layer of crumbled shortcake at the bottom. Next, add a layer of the macerated strawberries, followed by a generous dollop of whipped cream. Repeat the layers until the glasses are filled, finishing with a dollop of whipped cream on top.
- Garnish each parfait with a fresh mint leaf. Serve immediately or refrigerate for up to 2 hours before serving.
