Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 3 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 2 cups store-bought shortcake or homemade vanilla sponge cake, crumbled
  • 0 Fresh mint leaves for garnish

Instructions

  1. In a medium bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Toss gently and let sit for about 15-20 minutes to allow the strawberries to release their juices.
  2. In a separate mixing bowl, combine the heavy whipping cream, vanilla extract, and remaining 1 tablespoon of granulated sugar. Whip the cream on medium speed until soft peaks form, then add the powdered sugar and continue to whip until stiff peaks form.
  3. In serving glasses or bowls, start by adding a layer of crumbled shortcake at the bottom. Next, add a layer of the macerated strawberries, followed by a generous dollop of whipped cream. Repeat the layers until the glasses are filled, finishing with a dollop of whipped cream on top.
  4. Garnish each parfait with a fresh mint leaf. Serve immediately or refrigerate for up to 2 hours before serving.
