Strawberry Spinach Pasta Salad Fresh and Flavorful Dish
Ingredients
- 8 oz whole wheat pasta (fusilli or bowtie)
- 2 cups fresh spinach, washed and leaves torn
- 1 cup strawberries, hulled and sliced
- 0.5 cup feta cheese, crumbled
- 0.25 cup walnuts, chopped and toasted
- 0.25 cup red onion, thinly sliced
- 0.25 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 0 to taste salt and pepper
Instructions
- In a large pot of salted boiling water, add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper until emulsified. Set aside.
- In a large mixing bowl, combine the cooked pasta, torn spinach leaves, sliced strawberries, crumbled feta cheese, toasted walnuts, and sliced red onion.
- Pour the dressing over the pasta salad and gently toss everything together until well combined. Adjust seasoning with additional salt and pepper if needed.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
