Ingredients

  • 4 cups fresh spinach leaves, washed and dried
  • 1 cup strawberries, hulled and sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup walnuts, toasted and roughly chopped
  • 0.25 cup red onion, thinly sliced
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • 0 to taste salt
  • 0 to taste pepper

Instructions

  1. In a large bowl, combine the fresh spinach leaves and sliced strawberries.
  2. Add the crumbled feta cheese and toasted walnuts to the bowl.
  3. For the dressing, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper in a small bowl until emulsified.
  4. Drizzle the dressing over the salad mixture.
  5. Gently toss all the ingredients together until the spinach and strawberries are coated with the dressing.
  6. Finally, add thinly sliced red onion on top for extra flavor and serve immediately.
