Ingredients

  • 4 slices artisan bread
  • 1 cup fresh spinach, washed and roughly chopped
  • 1 2 cup ricotta cheese
  • 1 2 cup sun-dried tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for garnish fresh basil leaves

Instructions

  1. In a bowl, combine the ricotta cheese, chopped spinach, sliced sun-dried tomatoes, garlic powder, salt, and pepper. Mix until well combined.
  2. Take two slices of artisan bread and spread a generous amount of the ricotta filling on each. Top with shredded mozzarella cheese for extra creaminess and flavor. Place the remaining slices of bread on top to form two sandwiches.
  3. In a skillet, heat the olive oil over medium heat. Once hot, carefully place the sandwiches in the skillet. Cook for 4-5 minutes on one side until golden brown and crispy.
  4. Gently flip the sandwiches using a spatula and cook for an additional 4-5 minutes on the other side, until the mozzarella is melted and the bread is golden and crisp.
  5. Remove from the skillet, let cool for a minute, then cut in half. Garnish with fresh basil leaves for a pop of color and flavor.

💡 Chef's Notes

Serve with marinara sauce for dipping and drizzle with balsamic glaze for added flavor.
