Sun-Dried Tomato, Spinach, and Ricotta Grilled Cheese Delight
Ingredients
- 4 slices artisan bread
- 1 cup fresh spinach, washed and roughly chopped
- 1 2 cup ricotta cheese
- 1 2 cup sun-dried tomatoes, sliced
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- to taste salt and pepper
- for garnish fresh basil leaves
Instructions
- In a bowl, combine the ricotta cheese, chopped spinach, sliced sun-dried tomatoes, garlic powder, salt, and pepper. Mix until well combined.
- Take two slices of artisan bread and spread a generous amount of the ricotta filling on each. Top with shredded mozzarella cheese for extra creaminess and flavor. Place the remaining slices of bread on top to form two sandwiches.
- In a skillet, heat the olive oil over medium heat. Once hot, carefully place the sandwiches in the skillet. Cook for 4-5 minutes on one side until golden brown and crispy.
- Gently flip the sandwiches using a spatula and cook for an additional 4-5 minutes on the other side, until the mozzarella is melted and the bread is golden and crisp.
- Remove from the skillet, let cool for a minute, then cut in half. Garnish with fresh basil leaves for a pop of color and flavor.
